These are the cured meats that have been filling the family tables with joy on those moments of “celebration in the rural world”, these products were consumed on happy occasions like the threshing, the grape harvest, new wine tapping. These are meat products obtained from carefully selected pork, the first two, and beef for the third. The meat cut is added with a specific seasoning, diversified for the different types of product, the result of charcuterie tradition; then the maturing phase begins after placing into natural or synthetic casings depending on the product and on the expected seasoning period.
