Napoli spicy salamella
This small spicy sausage is a charcuterie product consisting of lean pork meat: the neck, shoulder, loin, bacon fat and bacon carefully selected. The meat is chilled in a thin layer and minced with No. 8 moulds, then seasoned with salt, sugar, spices, hot chili, and aromas, ascorbic acid, E252. Stuffed into a synthetic small casing and then matured either opened out of folded in a horseshow shape. The product’s diameter at the end of maturing is between 3 and 3.5 cm for a length of 22/24 cm. The seasoning lasts 10-15 days and the final result is a bright red sausage with an obvious preponderant lean part, a delicate aroma typical of the product, a compact texture, a very tasty spicy flavour with no hint of acidity.
It does not contain allergens indicated by the Directive 2003/89 EC, absence of pathogenic microorganisms, higher content of the lactic probiotic microorganisms typical of natural seasoning. - Moisture 33% on T.Q. - Lipids 32% on T.Q. - Protein 26% on T.Q. - Ash 5% on T.Q. - Carbohydrates 1% - Available in these sizes: around 0.500 kg vacuum packed
